3 Quick & Easy Winter Meals

The holidays are over and its back to work and school. These short, dark days of winter can leave me feeling like I can't get everything done and have time to cook, too. I like to keep it easy in the kitchen this time of year to make space for other things (like extra sleep!). However, I still make sure to prepare meals that are balancing during winter - which means foods that are warm, moist and heavy to counter the cold and windy nature of this season. Here are three of my favorite easy winter meals.

One Pot Winter Chili

Don't let the long list of ingredients fool you. Chop quickly, stir for a bit, then leave it alone. The lack of dishes makes your life easier, too!


Pesto Pasta with Shrimp and Peas

This one requires a couple of pots and pans, but it comes together super quickly. This is a great recipe for the nights when you get home late and need to get everyone fed ASAP.


Roasted Roots

This one takes a little longer, but the hands-on time is minimal. Add some chicken thighs for higher protein needs. Another recipe that requires few dishes.
