Pho Quinoa Salad

Have your pho broth ready ahead of time and this dish is a quick fix.

Yields

about 6 people

Ingredients

2 cups quinoa, soaked at least 6 hours then rinsed and drained

2 1/2 cups pho broth (make your own with this recipe or you can purchase Pacific brand or similar)

1 cup thinly sliced red cabbage

1/2 cup chopped scallion

1/2 cup chopped fresh basil

1/2 cup chopped fresh cilantro

1 small carrot, grated

Juice of 2 limes

3 Tbsp toasted sesame oil

2 Tbsp Bragg's Liquid Aminos or tamari soy sauce

Directions

  1. Combine quinoa and broth in a large pot and bring to a boil.  Lower heat to simmer and cook until all liquid is absorbed, about 20-25 minutes.
  2. Meanwhile, chop and grate remaining ingredients.
  3. Allow quinoa to cool a bit, then add all ingredients, stirring to mix well.
  4. Enjoy warm, at room temperature, or chilled.
