1 1/2 cups whole raw almonds

6 - 7 large Medjool dates, pitted and roughly chopped

2 Tbsp coconut oil

1/4 tsp ground cardamom

1/2 tsp ground cinnamon

1 Tbsp pure vanilla extract

1/4 tsp sea salt


  1. Preheat oven to 350 degrees and grease a baking sheet with ghee or coconut oil.
  2. Place almonds in a food processor and pulse for several minutes until coarsely chopped.
  3. Add remaining ingredients and pulse again until a thick, sticky dough is created.
  4. Form dough into 2" diameter balls, place on greased baking sheet and flatten a bit.  (You can also form a well in the center to be filled with jam after baking, if desired.)
  5. Bake for approx. 12-15 minutes or until lightly brown. Allow to cool slightly (they will crumble otherwise) and enjoy.
