Homemade Avocado Oil Mayo

For this recipe, you will need an immersion blender.  It makes mayo so simple, you will wonder why you EVER bought it in the store!

Yields

1 Quart

Ingredients

2 eggs

1 tsp sea salt

3 cups avocado oil (give or take)

4 Tbsp apple cider vinegar or fresh squeezed lemon juice

Directions

  1. Place all ingredients in a quart mason jar.
  2. Using an immersion blender, start at the bottom and blend up to the top as the oil emulsifies.  For a thicker mayo, add more oil.
