Grandma Mary's Gluten Free Stuffing

one 8"x8" loaf pan


1 loaf gluten free bread

6 Tbsp olive oil

2 cups chopped celery

1 cup finely chopped carrot

10 button mushrooms, chopped

 1 large onion, chopped

1 medium apple, chopped into small chunks

1 egg, beaten

1/2 cup fresh cranberries (optional)

1 Tbsp minced garlic

1 tsp each safe, thyme and marjoram

Sea salt and freshly ground pepper, to taste


  1. Oil and 8"x8" loaf pan and preheat oven to 375 degrees.  Cut loaf of bread into cubes and toast in the oven until it just begins to brown.
  2. Meanwhile, saute vegetables in 3 Tbsp oil over medium heat for about 4-5 minutes.  They should still be crunchy.
  3. Combine sauteed vegetables, 3/4 of the toasted bread cubes with remaining ingredients in a large bowl.  Mix with your hands until everything is an even consistency.
  4. Add additional bread cubes and/or olive oil until a uniformly moist texture is achieved and the mixture sticks together.  Press very tightly into the oiled loaf pan.
  5. Bake one hour.  Remove foil and bake an additional 15 minutes, or until the stuffing is slightly browned.
