1 medium or large beet, grated

1 raw apple, sliced thin (optional)

Juice of 1/2 lemon

Dijon mustard to taste (about 1 Tbsp for a large beet, optional)

Fresh ginger, finely grated


  1. Combine all ingredients in a medium bowl.  Stir to evenly coat.
  2. Enjoy a portion of this salad with each meal.
  3. Store in an airtight container in the fridge for up to 4 days.


Raw beets promote bile production. This salad is especially beneficial if you have difficulty digesting fats.
